This pumpkin spice granola is the perfect recipe for a quick breakfast filled with all the delicious fall spices. It comes together in minutes, it’s healthy and simple to make.
PUMPKIN SPICE GRANOLA
Ingredients
- 2 cups rolled oats
- 3/4 cup pumpkin pepitas (Shelled pumpkin seeds)
- 1/2 cup chopped pecans
- 1/3 cup maple syrup , or honey
- 1/3 cup almond butter
- 2 tbsp coconut oil
- 1/2 tsp Himalayan pink salt , or sea salt
- 2 tsp pumpkin spice *see note
Instructions

Preheat your oven to 350F.

Line a baking sheet with parchment paper and set aside for later.

In a large bowl, combine the oats, pumpkinseeds, and chopped pecans coconut. Give the dry ingredients a good mix to combine.

In a small sauce pan, add the maple syrup, almond butter, coconut oil, sea salt and pumpkin spice. Cook over low heat stirring constantly until all the wet ingredients are well combined.

Pour the wet ingredients into the large bowl of dry ingredients. Stir very well to ensure there are no dry spots.

Spread the granola evenly on your prepared baking sheet.

Bake for 25 minutes stirring the granola after 10 minutes of cooking.

After 25 minutes, remove from the oven and let cool completely on the baking sheet. Do not stir the granola at this point, as that will break up the granola clusters.

Once completely cooled, gently scoop into mason jars or airtight container.

Sprinkle on your favorite yogurt, fruit or simply eat with some nut milk and enjoy!
