GRILLED CORN AND HALLOUMI SALAD

It’s corn season! This grilled corn and Halloumi salad is the perfect side dish for any summer dinner. This salad is packed with flavour and quite easy to make.

GRILLED CORN AND HALLOUMI SALAD

Ingredients

For the salad:

  • 6 large ears of corn, shucked and silks removed
  • 235 grams Halloumi cheese log , sliced in 1/2inch slices
  • 1/2 cup red bell pepper , diced
  • 1 jalapeno , ribs and seeds removed, finely diced
  • 1/2 cup cilantro , chopped
  • 2 large scallions , thinly sliced

For the vinaigrette:

  • 2 tbsp extra-virgin olive oil
  • 3 tbsp fresh lime juice
  • 1 tbsp mayonnaise
  • 1 tbsp maple syrup
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • Freshly ground pepper to taste

Instructions

  1. Preheat an outdoor grill to medium-high heat. Grill the corn cobs for 8-10 minutes, rotating a few times until evenly charred.

  2. Remove the corn cobs and set aside on a plate until cooled.

  3. On the hot grill, add the Halloumi cheese and grill for 2-3 minutes per side until there are even grill marks. Set aside to cool.

  4. In the meantime, let’s make the vinaigrette. Add to a small jar, the olive oil, lime juice, mayonnaise, maple syrup, sea salt, garlic powder and pepper. Shake until well combined and set aside for later.

  5. Once the corn is cool to the touch, use a large knife and cut away the corn kernels from the cob.

  6. Dice the grilled Halloumi slices into ½ inch cubes.

  7. In a large bowl add the corn kernels, Halloumi cubes, the bell pepper, the jalapeno, the cilantro, the scallions and your vinaigrette. Mix, cover and place in the refrigerator for approximately 2 hours before serving.

  8. Serve and enjoy!
