This strawberry & lemon smoothie is deliciously sweet but also slightly tangy. Inspired by one of my favorite summer drinks (strawberry lemonade), this smoothie is a great meal or snack on a warm summer day. Putting zucchini in a smoothie probably sounds odd at first but I promise it will give your smoothie a very creamy texture without tasting like zucchini. A hidden serving of vegetable in a sweet and creamy smoothie sounds like a win to me. This strawberry & lemon smoothie recipe will yield about one liter of smoothie. I like to either have it all as a meal since it is packed with protein and healthy fats or split it up in two smaller mason jars and have it as a quick snack on the go.
Here are the (very few) steps to make this delicious smoothie:
Place all you ingredients in the jar of a blender.
Blend until smooth and voilà! Enjoy!

STRAWBERRY AND LEMON SMOOTHIE
Ingredients
- 1 1/2 cups fresh strawberries , chopped
- 1 small zucchini , pealed and sliced
- 1/4 of an avocado
- Juice from 1 large lemon
- 1 scoop vanilla protein powder , which ever is your favorite
- 1 1/2 cups cashew milk , or milk of choice
- 1/2 cup ice cubes
