Cilantro Hummus

CILANTRO HUMMUS

Ingredients

  • 3 cups chickpeas , drained and rinsed
  • 1/2 cup tahini
  • 2 tbsp olive oil
  • 6 tbsp lemon juice , fresh squeezed
  • 3 tbsp water
  • 1 large clove of garlic
  • 1 tsp garlic powder
  • 1/2 tsp Himalayan pink salt , or sea salt
  • 1/8 tsp pepper
  • 1/2 cup fresh cilantro , finely chopped

Instructions

  1. Place all of your ingredients, except the cilantro in the bowl of your food processor.
  2. Pulse the ingredients for about a minute to get it going.
  3. Scrape down the sides of the food processor.
  4. Turn the food processor back on and let it blend for another minute or until completely smooth. The times will vary based on the food processor you are using.

  5. Scrape down the sides again and add in the finely chopped cilantro.
  6. Pulse for about 15 seconds. You are just looking to mix in the cilantro but also keep it intact. If you over mix the cilantro into the hummus, it will start to turn a light green colour. It will still taste wonderful it will just have a different colour. 

  7. Scoop the hummus into your desired serving dish and refrigerate for about an hour to let the flavours develop some more.

  8. Serve with whatever your heart desires and enjoy.

Recipe Notes

This hummus will keep for up to a week if refrigerated in an air tight container.
