I will be honest with you, this was my first go at making hummus. I had always wanted to try making some since I love hummus but never actually took the time to do so until this week. Knowing that the base ingredients were chickpeas and tahini, which I had on hand, I decided to give it a whirl. I threw a couple ingredients into my food processor and tasted as I went until I had the perfect balance of flavours. I made this cilantro hummus and it ended up tasting amazing. Seriously though, you should try it, it’s very easy and so much better than store bought. Everyone in my family loved it. You could leave out the cilantro as I know people have a love hate relationship with cilantro but trust me when I say the cilantro is delicious in this hummus. You will need a food processor to make this but that’s it. It’s super simple. You throw everything into the food processor and let it do its thing. It a fresh and healthy appetizer which is perfect for this time of year. As delicious as holiday food is, sometimes it’s nice to have a lighter option on your holiday spread. Now let’s get to cooking:
Place all of your ingredients, except the cilantro in the bowl of your food processor.
Start by pulsing the ingredients for about a minute to get it going. Scrape down the sides of the food processor. Turn the food processor back on and let it blend for another minute or until completely smooth. The times will vary based on the food processor you are using.
Scrape down the sides again and add in the finely chopped cilantro. Pulse for about 15 seconds.
You are just looking to mix in the cilantro while keeping it intact. If you over mix the cilantro into the hummus, it will start to turn a light green colour. It will still taste wonderful it will just have a different colour.
Scoop the hummus into your desired serving dish and refrigerate for about an hour to let the flavours develop some more.
Serve with whatever your heart desires and enjoy.
This hummus will keep for up to a week if refrigerated in an air tight container.
CILANTRO HUMMUS
Ingredients
- 3 cups chickpeas , drained and rinsed
- 1/2 cup tahini
- 2 tbsp olive oil
- 6 tbsp lemon juice , fresh squeezed
- 3 tbsp water
- 1 large clove of garlic
- 1 tsp garlic powder
- 1/2 tsp Himalayan pink salt , or sea salt
- 1/8 tsp pepper
- 1/2 cup fresh cilantro , finely chopped
Instructions
