Almond Coconut Energy Bites

ALMOND COCONUT ENERGY BITES

Ingredients

  • 1 1/4 cups raw almonds
  • 1/2 cup shredded coconut , unsweetened
  • 1/4 cup rolled oats
  • 1/4 tsp. Himalayan pink salt , or sea salt
  • 1 cup fresh Medjool dates , pitted
  • 3 tbsp. coconut oil , melted
  • 3 tbsp. maple syrup

Instructions

  1. Place the raw almond, coconut, oats and Himalayan pink salt in the bowl of your food processor. 

  2. Pulse until the dry ingredients resemble a coarse flour.

  3. Add in the pitted dates and pulse again until the dates are well combined into the dry ingredients. You shouldn’t be able to see any large chunks of dates.

  4. Add in the melted coconut oil and maple syrup. 
  5. Pulse again for another 30 seconds or until the mixture is well combined.
  6. Pour the mixture into a medium sized bowl and line a large plate with parchment paper. 

  7. Give the mixture a quick toss to ensure that there are no dry spots. 
  8. Using your hands, roll the mixture into balls (about the size of a golf ball) and then place them on the parchment lined plate. You should get about 16 Almond Coconut Energy Bites with this recipe.

  9. Place the bites in the freezer for at least 1 hour. 

  10. Once frozen, enjoy!

Recipe Notes

  • I like to store these Almond Coconut Energy Bites in a parchment lined air tight container which I keep in the freezer. They can also be kept in the refrigerator but I really love the taste when they are frozen.
