Place the raw almond, coconut, oats and Himalayan pink salt in the bowl of your food processor.
Pulse until the dry ingredients resemble a coarse flour.
Add in the pitted dates and pulse again until the dates are well combined into the dry ingredients. You shouldn’t be able to see any large chunks of dates.
Pour the mixture into a medium sized bowl and line a large plate with parchment paper.
Using your hands, roll the mixture into balls (about the size of a golf ball) and then place them on the parchment lined plate. You should get about 16 Almond Coconut Energy Bites with this recipe.
Place the bites in the freezer for at least 1 hour.
Once frozen, enjoy!
