Almond Coconut Energy Bites

Almond Coconut Energy Bites

One thing I love to do is walk around grocery stores to see what new products are around but also to take a look at the ingredient list to see what kind of ingredients are found in all those so called “healthy” products. So many are packed full of added refined-sugar, hydrogenated oil and processed ingredients. All things that in my opinion we should limit our consumptions of and avoid completely if possible. I created this recipe of Almond Coconut Energy Bites when I was looking for a little pre-workout pick me up. They are the perfect snack when you are going to do exercise or just need a little sweet afternoon treat. They are made of healthy fats, and carbohydrates that will keep you going and curb any sweet craving. They are also very simple to make and will keep very well in the freezer.

Here is how these delicious Almond Coconut Energy Bites are made:

Almond Coconut Energy Bites

Place the raw almond, coconut, oats and Himalayan pink salt in the bowl of your food processor.

Pulse until the dry ingredients resemble a coarse flour.

Add in the pitted dates and pulse again until the dates are well combined into the dry ingredients. You shouldn’t be able to see any large chunks of dates.

Next add in the melted coconut oil and maple syrup. Pulse again for another 30 seconds or until the mixture is well combined.

Pour the mixture into a medium sized bowl and line a large plate with parchment paper. Give the mixture a quick toss to ensure that there are no dry spots. Using your hands, roll the mixture into balls (about the size of a golf ball) and then place them on the parchment lined plate. You should get about 16 Almond Coconut Energy Bites with this recipe.

Place the bites in the freezer for at least 1 hour. Once frozen, enjoy!

I like to store these Almond Coconut Energy Bites in a parchment lined air tight container which I keep in the freezer. They can also be kept in the refrigerator but I really love the taste when they are frozen.

Ingredients

  • 1 1/4 cups raw almonds
  • 1/2 cup shredded coconut , unsweetened
  • 1/4 cup rolled oats
  • 1/4 tsp. Himalayan pink salt , or sea salt

  • 3 tbsp. maple syrup
