BRUSCHETTA

Ingredients

  • 3 cups fresh tomatoes, diced I like to use a mix of different varieties (heirloom, cherry, etc.)
  • 1/4 cup finely chopped French Shallot , about 1 large
  • 2 cloves of garlic , finely minced
  • 1/4 cup loosely packed fresh basil leaves , roughly chopped
  • 1/4 cup whole pitted green olives , coarsely chopped
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp sea salt
  • Pepper to taste

Instructions

  1. In a medium bowl, add the tomatoes, shallot, garlic, basil, olives, olive oil, salt and pepper.

  2. Give the ingredients a gently toss to combine.

  3. Grill some fresh baguette or slices of crunchy French bread on a grill pan or a bbq until nicely grilled on both sides.

  4. Topped the grilled bread slices with the bruschetta mixture, serve and enjoy!
