Add the cashews, oats, hemp seeds and salt into a high-speed blender or a food processor.
Pulse until the dry ingredients reassemble coarse flour.
Add in the vanilla extract, maple syrup and coconut oil. Blend until the cookie dough comes together.
Transfer the cookie dough into a mixing bowl.
Stir in the rolled oats and the dark chocolate.
Form the dough into balls. I used a cookie scoop that holds about 1 heaping tablespoon of dough.
Place onto a parchment or wax paper lined plate. Freeze for about 30 minutes and enjoy.
