HEALTHY COOKIE DOUGH BITES

Ingredients

  • 1 cup raw cashews
  • 1/2 cup rolled oats
  • 3 tbsp hemp seeds
  • 1/2 tsp Himalayan pink salt , or sea salt
  • 1 tsp vanilla extract
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil , melted

Mix-ins

  • 1/2 cup rolled oats
  • 1/2 cup dark chocolate , chopped

Instructions

  1. Add the cashews, oats, hemp seeds and salt into a high-speed blender or a food processor.

  2. Pulse until the dry ingredients reassemble coarse flour.

  3. Add in the vanilla extract, maple syrup and coconut oil. Blend until the cookie dough comes together.

  4. Transfer the cookie dough into a mixing bowl.

  5. Stir in the rolled oats and the dark chocolate.

  6. Form the dough into balls. I used a cookie scoop that holds about 1 heaping tablespoon of dough.

  7. Place onto a parchment or wax paper lined plate. Freeze for about 30 minutes and enjoy.

Recipe Notes

  • To keep this recipe gluten-free, make sure you use certified gluten-free rolled oats.
  • To keep this recipe vegan, make sure you use dairy-free dark chocolate.
