This past February, I got the chance to travel to Riviera Maya in Mexico with two of my really good friends. I had never been down south other than Florida, so I was quite excited to be able to finally experience a trip to such beautiful and sunny destination. During our trip, we got to visit the ruins in Tulum as well as Isla de Mujeres which definitely lived up to their reputation of having some of the nicest beaches in all of Mexico. We enjoyed our week of relaxing at the Blue Bay Grand Esmeralda Resort in Riviera Maya, Mexico. This resort is big and beautiful, the employees were beyond friendly and the food was great. I got to eat guacamole and fresh fruit to my heart’s content. Fruit and guacamole are two of my favorite things to eat. They made delicious guacamole at our resort which is what inspired me to post my own guacamole recipe on my blog. Here are some of my favorite pictures from my trip.

I have been making guacamole for years since it was my go to late night snack in university when I was studying. For that reason, I think I have mastered the perfect recipe. Guacamole recipes can vary quite a bit though. Some like it with cilantro, or tomatoes, or onions, lime, no lime, chunky, smooth etc. The options are endless. However, for me personally, I like a creamy smooth guacamole with lots of cilantro and lime. This is my go-to base which I will occasionally add some green onions or finely chopped tomatoes to it when I am feeling fancy. But for the most part, I like my guacamole simple but delicious.
Here is how I make my simple guacamole recipe:
Peel and pit the avocados. In a medium bowl, place your avocados, lime juice, garlic powder, red pepper flakes, Himalayan pink salt and pepper.
Using a fork, give the ingredients a good mash until you reach your desired texture and all your ingredients are well combined. I personally like mine very smooth.
Add in your chopped cilantro and give your guacamole a stir to mix in the cilantro.
Transfer into your desired serving dish and enjoy!
I love to serve guacamole with tortilla chips (classic!) but I also love to have it for breakfast on my Nut and Seed Loaf (CLICK HERE to see the recipe for my Nut and Seed Loaf). I like to lightly toast a slice, spread on some guacamole, then add slices of fresh tomatoes or even a fried egg. It makes for the best breakfast.
Quick tip: If you have some leftover guacamole, place it into an air tight container then throw the pits of both avocados into the bowl and store it in the refrigerator. Adding in the pit, will prevent the guacamole from browning so quickly.

SIMPLE GUACAMOLE
Ingredients
- 2 large avocados , ripe
- 1 1/2 tbsp fresh lime juice
- 1 tsp garlic powder
- 1/4 tsp red pepper flakes
- 3/4 tsp Himalayan pink salt
- 1/4 tsp freshly ground black pepper
- 2 tbsp fresh cilantro , finely chopped
