Life can get pretty hectic, mornings especially. For that reason, I like to meal prep quick and easy breakfast options that will help me get out the door in the morning. I have always loved granola, but the main drawback for me was the amount of sugar and oils found in some granolas. For that reason, I have decided to create my own recipe that is healthy, vegan and way more cost effective than store bought granola. I also wanted to create a large recipe so that I always have a simple and healthy breakfast on hand for my family and me. This simple granola recipe comes together in minutes and yields about two quart-size mason jars of granola. The best part of this vegan granola is that it freezes beautifully. I love to keep one mason jar in the freezer to keep it fresh and the other in my pantry. I love this recipe and am excited to share my new favorite granola with you.
Here is how my simple granola recipe is made:
Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside for later.
In a large bowl, combine the oats, chopped nuts, coconut, cinnamon and sea salt. Give the dry ingredients a good mix to combine.
Next, in a small sauce pan, add the maple syrup, almond butter and coconut oil. Cook over low heat stirring constantly until all the wet ingredients are well combined.
Pour the wet ingredients into the large bowl of dry ingredients.
Stir very well to ensure there are no dry spots.
Spread the granola evenly on your prepared baking sheet. Bake for 20 minutes stirring the granola half way through the cook time.
After 20 minutes, remove from the oven and let cool completely on the baking sheet. Do not stir the granola at this point, as this that will break up the granola clusters.
Once completely cooled, gently scoop into mason jars or airtight container.
Sprinkle on your favorite yogurt, fruit or simply eat with some nut milk and enjoy!

- 2 cups mixed nuts of choice , roughly chopped
- 1 cup flaked coconut , unsweetened
- 1 1/2 tsp cinnamon
- 3/4 tsp sea salt
- 1/2 cup maple syrup
- 1/2 cup almond butter
- 3 tbsp coconut oil
