This orange & ginger salad is the perfect side during those warm summer months. The sweetness and freshness of the orange is a great compliment to the ginger and mustard dressing. It is a very simple recipe that comes together in no time. It can be served as a side for 4 to 6 people but I also like to split it in half and serve it as a meal with an added protein such as grilled salmon.
Here are the steps to create this delicious orange and ginger salad:

Let’s start with the dressing. Place all the ingredients in a small mason jar and give it a good shake until well combined.
Next, in a large bowl, combine all the salad ingredients. Pour in the dressing and give the salad a good toss.

ORANGE & GINGER SALAD
Ingredients
For the dressing:
- 1/4 cup olive oil
- 2 tsp dijon mustard
- 1 tsp whole-grain mustard
- 2 tsp fresh ginger , grated
- 3 tbsp maple syrup
- 1/4 tsp sea salt
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- Pinch black pepper
For the salad:
- 5 oz mixed green lettuce
- 1 cup matchstick carrots
- 1 small avocado , diced
- 1/2 cup cashews
- 1 navel orange , peeled and sectioned
- 3 green onions , chopped
