Orange & Ginger Salad

This orange & ginger salad is the perfect side during those warm summer months. The sweetness and freshness of the orange is a great compliment to the ginger and mustard dressing. It is a very simple recipe that comes together in no time. It can be served as a side for 4 to 6 people but I also like to split it in half and serve it as a meal with an added protein such as grilled salmon.

Here are the steps to create this delicious orange and ginger salad:

Let’s start with the dressing.

Let’s start with the dressing. Place all the ingredients in a small mason jar and give it a good shake until well combined.

Next, in a large bowl, combine all the salad ingredients. Pour in the dressing and give the salad a good toss.

ORANGE & GINGER SALAD

Ingredients

For the dressing:

  • 1/4 cup olive oil
  • 2 tsp dijon mustard
  • 1 tsp whole-grain mustard
  • 2 tsp fresh ginger , grated
  • 3 tbsp maple syrup
  • 1/4 tsp sea salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • Pinch black pepper

For the salad:

  • 5 oz mixed green lettuce
  • 1 cup matchstick carrots
  • 1 small avocado , diced
  • 1/2 cup cashews
  • 1 navel orange , peeled and sectioned
  • 3 green onions , chopped

Instructions

  1. For the dressing: Place all the ingredients in a small mason jar and give it a good shake until well combined.

  2. In a large salad bowl, combine all the salad ingredients. Pour in the dressing and give the salad a good toss. 

  3. Serve and enjoy.
