These healthy cookie dough bites are delicious as well as nutritious. As a kid I would love eating the raw cookie dough when my family and I would make cookies. We can all agree that regular cookie dough is not the healthiest treat and since it does contain raw eggs, it is most likely not the safest thing to be eating either. This recipe is the perfect alternative to one of my favorite childhood treats. They are made of wholesome ingredients and contain healthy fats and protein. They make a great dessert but also a very good and quick snack when you need that little bit of sweetness.
Here are the steps to create these delicious and healthy cookie dough bites:
Add the cashews, oats, hemp seeds and salt into a high-speed blender or a food processor.
Pulse until the dry ingredients ressemble a coarse flour.
Add in the vanilla extract, maple syrup and coconut oil. Blend until the cookie dough comes together.
Transfer the cookie dough into a mixing bowl. Then, stir in the rolled oats and the dark chocolate.
Form the dough into balls. I used a cookie scoop that holds about 1 heaping tablespoon of dough. Place onto a parchment or wax paper lined plate.
Freeze for about 30 minutes and enjoy.

Ingredients

- 3 tbsp hemp seeds
- 1/2 tsp Himalayan pink salt , or sea salt
- 1 tsp vanilla extract
- 3 tbsp maple syrup
- 2 tbsp coconut oil , melted
Mix-ins
- 1/2 cup rolled oats
- 1/2 cup dark chocolate , chopped
