This bruschetta is the perfect appetizer for any summer or fall dinner. Although bruschetta can be made anytime of the year, I highly recommend making it when you have fresh, in-season tomatoes. The flavour will be so much better which is why this recipe requires very few ingredients. I prefer to keep my bruschetta recipe simple and fresh in order to showcase the sweet and delicious tomato flavour.
Here is how this bruschetta is made:
In a medium bowl, add the tomatoes, shallot, garlic, basil, olives, olive oil, salt and pepper.

Give the ingredients a gently toss to combine.
Grill some fresh baguette or slices of crunchy French bread on a grill pan or a bbq until nicely grilled on both sides.
Topped the grilled bread slices with the bruschetta mixture, serve and enjoy!

BRUSCHETTA
Ingredients
- 3 cups fresh tomatoes, diced I like to use a mix of different varieties (heirloom, cherry, etc.)
- 1/4 cup finely chopped French Shallot , about 1 large
- 2 cloves of garlic , finely minced
- 1/4 cup loosely packed fresh basil leaves , roughly chopped
- 1/4 cup whole pitted green olives , coarsely chopped
- 2 tbsp extra-virgin olive oil
- 1/2 tsp sea salt
- Pepper to taste
