BANANA BAKED OATMEAL

If you love oatmeal and banana bread, this banana baked oatmeal is the perfect blend of both and the perfect recipe for you. This banana baked oatmeal can be eaten warm with a drizzle of maple syrup but it also great cold as a quick on-the-go breakfast.

Here is how this banana baked oatmeal is made:

Preheat your oven to 350F. In a large bowl, mash well the bananas with a fork.

To the mashed bananas add the egg, light coconut milk and maple syrup. Whisk until well combined.

To the wet ingredients, add the rolled oats, baking soda, baking powder and salt. Mix to combine.

Add the chopped walnuts and dark chocolate. Stir until well combined.

Spray an 8×8 pan with non-stick cooking spray. Pour your banana oat mixture in your prepared pan.

Bake for an hour. You are looking for the top and edges to be nice and dark golden.

Remove from the oven and let cool for 10-15 minutes before serving. This banana baked oatmeal is great served warm with a drizzle of maple syrup, but I also love to refrigerate it and eat it cold when I am on the go.

This banana baked oatmeal can be stored covered in the refrigerator for up to 3-4 days.

Ingredients

  • 3 large bananas , very ripe
  • 1 can light coconut milk
  • 1 large egg
  • 1/2 cup maple syrup or honey
  • 2 cups rolled oats
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp Himalayan pink salt , or sea salt
  • 1 cup walnuts , chopped
  • 1/2 cup dark chocolate , chopped
